CORN (MAIZE) [Zea mays]

There is a reason why Corn [Zea mays] is the most-produced grain worldwide; it is involved in just about every aspect of our lives.

Corn provides about 21% of Human Nutrition across the Globe. There are many other Non-culinary uses for the grain as well; it is a key ingredient in Ethanol, Cosmetics, Ink, Glue, Laundry Starch, Medicines and Fabrics, just to name a few. Corn is an essential ingredient in our diets and also in our world.

Fresh Corn is on the cob. PopCorn, Corn cakes, Polenta, Tortillas, Corn muffins. Though sometimes dismissed as a nutrient-poor starch – both a second-rate vegetable and a second-rate grain – Corn is lately being reassessed and viewed as a healthy food. Traditional Latin cultures learned how to treat Corn with alkali, creating masa harina. This treatment liberates the niacin in Corn, so those who depend on it for sustenance will avoid pellagra. Eating Corn with beans creates a complementary mix of amino acids that raises the protein value to humans.

How to be sure you’re getting whole Corn: Avoid labels that say “degerminated” when you’re looking for whole-grain Corn, and look for the words whole Corn.

Maize primarily knows as Corn in India, Maize is widely cultivated throughout the world, and a greater weight of Maize is produced each year than any other grain.

India is the largest producer of Maize in the world, with 14.06 lakh MT during the year 2011. The country ranks 6th in Maize production with 3.39% share in total work production.

1. Each whole grain offers different nutrients, and in the case of Corn, its high point is Vitamin A – with more than 10 times that of other grains. Recent research shows that Corn is also High in Antioxidants and Carotenoids that are associated with Eye Health, such as Lutein and Zeaxanthin. As a Gluten-Free Grain, Corn is a key ingredient in many gluten-free foods.

2. In many traditional cultures, Corn is eaten with beans, as they have complementary Amino Acids that work together to provide complete proteins.

3. Research from Cornell (no pun intended!) shows that Corn has the highest level of antioxidants of any grain or vegetable – almost twice the antioxidant activity of apples!

How to Buy Maize

• Maize is available in hulled and whole-grain forms. It is commonly found in pre-packaged and bulk containers in the grain section of supermarkets.

• While purchasing them in bulk, check that the bins are covered and the store has a good product turnover. This is done to ensure maximum freshness.

• Check for any signs of moisture while purchasing.

Storage Tips • When stored in an Airtight or Vacuum Pack Container in a Cool, Dry and Dark Place.
